For most people starting a garden can seem like a very difficult task but with the right knowledge, understanding, and resources you can be on your way to being more self-sufficient.

Here are recipes you can create using the fruits and vegetables from your garden.

Apple French Toast Roll-Ups

Ingredients

2 medium apples, peeled1/2tsp (1.5g) Cinnamon 2tsp(10ml)

lemon juice

2eggs

3tbsp(45ml) milk

10-12toast bread slices

4oz(120g) cream cheese, room temperature

1/3cup(67g) sugar

1tsp(3g) ground cinnamon

2tbsp(28g) butter, for cooking

Instructions

1.Place apple pieces, cinnamon and lemon juice in a small saucepan. Cook over low-heat for about 3 minutes, until apples start to soften. Transfer apples into a bowl and set aside to cool until ready to use.

2. In a bowl combine sugar with cinnamon and set aside. In another bowl beat eggs with milk and set aside.

3. Remove crust from each slice of bread and flatten using a rolling pin.

4. Spread cream cheese evenly on each slice of bread.

5. Add about 1-2 tsp of apples and roll up each slice.

6.Heat a non-stick pan over medium heat and melt about 1 tbsp of butter.

7. Dip each roll in egg mixture and cook on each side until golden brown. Cook 3-4 roll at a time. Clean the pan slightly with a paper towel and repeat until all rolls are cooked.

8. Roll into the sugar cinnamon mixture.

9. Serve warm and dip in maple syrup if desired.

EASY IRON RICH VEGAN MEALS


Sweet Potato + Black Beans

1 red onion

4 cloves of garlic

1 red pepper

2 tsp ground coriander

2 tsp ground cumin

2 tsp paprika

1 tsp maple - optional 1 tbsp tomato puree

2 large tbsp raw cacao 800g

chopped tomatoes.

200ml vegetable stock

Salt and black pepper to taste.

Vegetable Rice

1 cup of brown rice

200g sugar snap

1 red pepper

1 chili pepper

4 spring onions

1 large thumb of ginger

4 cloves of garlic

50-100g fresh edible seaweed

Aubergines

¼ cup soy sauce (or coconut aminos)

2-3 tbsp maple syrup

1 tbsp rice wine vinegar

1/2 juice from one orange

1 teaspoon cornstarch

1 tablespoon water

3 VEGAN HIGH PROTEIN Savoury Breakfast Ideas!


Recipe 1

2 avocados

Handful of fresh coriander,

finely chopped Handful of fresh chives, finely chopped Handful of spinach,

Squeeze fresh lemon juice.

1 x 400g can white beans

Salt to taste

1 clove of garlic,

minced Handful of mushrooms

1 tsp paprika Salt to taste

Recipe 2

Chickpea flour

1 tsp baking powder

Squeeze of fresh lemon juice

2 tomatoes

1 red pepper

1/2 courgetti

1 red onion

Handful of fresh coriander

Handful of fresh parsley

Salt to taste

Handful of mushrooms

1 tsp soy sauce

1 red chili


Recipe 3

1 red onion

1 tbsp mango chutney

2 tsp curry powder

1 tsp mustard seeds Salt to taste

1 x 400g can chickpeas

fresh spinach

Squeeze of fresh lemon

Chili flakes

Fresh coriander
